VINEYARDS: Village of Aramengo, San Giorgio hill
TRAINING SYSTEM: traditional guyot a 6/7 buds so a sto have low yields per hectare to obtain the best quality of the grape
HARVESTING: manual, in boxes in the first half of October
VINIFICATION: destemming and fermentation with maceration on the skins for about 8 days at a controlled temperature of 26°-28°C. After a few rackings and after the malolactic fermentation, it is aged in tonneaux of oak barrels for about 12 months. Then is stored in bottle in orizzontal position for about 6 months before being put on the market.
