HARVESTING: manual in boxes, in the second half of October
VINIFICATION: destemming and fermentation with maceration on the skins for about 15 days at a controlled temperature of 26-28°C. The wine is then left to age for about 12 months in large barrels and then a few months in the bottle
ORGANOLEPTIC CHARESTISTICS:
– COLOUR: Pretty light cherry garnet red with an orange tendency
– SCENTS: delicate, raspberry and rose
– TASTE: persistent, tannins present but well balanced, with balsamic hints
FOOD PAIRING: aged cheeses and main courses such as roasts, braised meats, game.
